Tell us about the wine you call Neil Ashmead GTS.
Neil was my father and he loved fast cars, his favorite was the Holden Monaro GTS. When Elderton Wines first started he would load the car with 60 boxes of wine and drive from Adelaide to Melbourne at 180km/h to sell the wine. He passed away in ’97, so my brother and I thought we would have a bit of a car theme, except we call our wine the Grand Tourer Shiraz.
Best memory of growing up in a wine family?
We moved to Saudi Arabia—where alcohol is very much prohibited—when I was seven. My father was a civil engineer by profession, so he started making wine in the bathtub, which is where I actually learned how to make wine. Of course it wasn’t very good wine.
The GTS is a “bio-dynamic wine”—what’s that all about?
That’s a European process, which means organic. We don’t use herbicides or pesticides, only natural treatments like horse or cow manure to fertilise the vineyards. So it’s very environmentally-friendly viticulture.
Any tips on how to best enjoy wine?
It’s all about practice. The one thing I’ve learned from working in this industry is that no one knows anything about wine. Even Masters of Wine don’t know everything. If you like it, drink it.
Elderton’s 2008 Neil Ashmead GTS ($191) is available at DFS Terminal 3, Changi International Airport, 65 Airport Blvd., 6891-9168.
